You can click the triangle ▼ button from there on the Action column. There's an Edit choice there that will enable you to change the account's name.

In case you'll want to minimize the columns in your Chat of accounts, just click the mini Gear icon and uncheck the column boxes.

I did what you described, but it just added another account with the new name. I changed it back and it merged it to the original account and disappeared. I then merged the two accounts (Sales and Sales of Product Income) in the chart of accounts to try to get rid of the one I did not want. It merged them and it says now that there is only one Sales Income Account, but when I try to create a new product Sales of Product Income still defaults in the create item box. I deleted all recurring transactions, but it did not solve the problem either. Any suggestions?

When you create a company, QuickBooks Online creates specific accounts by default. With this, when you try to change the name of an account that is the default, the system keeps present them. That's the reason when you try to create a new product, the Sales of Product Income still shows in the create item box.
