Sales receipts and invoices are similar but do have some distinct differences. A sales receipt is issued to a customer at the time of a sale. Invoices are generally used to tell your customers what they owe and how long they have to pay. Due to these specific differences, there isn't a ways to generate an invoice from a sales receipt. However, you may be interested in converting an estimate to an invoice. Estimates are sent to customers to give them an idea of what it will cost them for work you plan to do. Once your customer decides they would like to go through with the purchase, you could then convert the estimate into an invoice. The invoice would contain data from the estimate and details on how and when to pay. I recommend the following link to find out more about converting an estimate into an invoice in QuickBooks Online.

I also need to convert a sales receipt to an invoice, we use it in a different way that quickbook does and it is very tedious to do it manually when shopify syncs sales to quickbooks, it defeats the whole sync purpose.

Payments and processing fees are imported when your Shopify account is linked with QuickBooks. And, customers' orders are imported as sales receipts.
Being able to convert sales receipts to invoices isn't an option. In QuickBooks Online, you need to select which one of these entries to use for your business.
