We're unable to create own categories in QuickBooks Self-Employed. I suggest reaching out to your accountant on how to track or categorize the Charitable giving (donation/expense) since these kind of transactions are not covered under Schedule C.
We have the QuickBooks Online plan that which you can manage categories as accounts. For more information you can check out its Overview and the features under each plan.
