My desktop version had nice graphics that were links to actions such as pay bill, deposit, reconcile, etc. Now my screen has the icons at the bottom with a bunch of stuff I don't want. I hit a button last time that changed the screen to the old format and now I can't figure out how to do it again.

The one with the graphics is the one I want and not this one! How do I change to the graphic user interface?

I have reviewed the previous screenshot you provided of the interface you want to achieve and noticed that it is from QuickBooks Desktop for Mac. However, the image you shared this time is from the QuickBooks Online desktop application.
Please note that QBDT and QBO are two distinct products. Both are meant to assist businesses with managing their accounting and financial data, but QBDT is a desktop-based solution while QBO is a cloud-based software. Due to the platform differences, we are unable to make their user interfaces identical.
In QBO, there's a similar shortcut panel where you can perform quick actions, like paying your bills, entering invoices, and managing your other customer/vendor transactions. Just head to the Dashboard menu and select Home. You can customize the layout here by removing or changing the placement of widgets to suit your preferences.
You can also adjust the sidebar menu by clicking the Menu settings button at the bottom. Additionally, there are two ways to display your account: business view and accountant view. Your default view is based on what you tell us when you first set up QuickBooks. With the new interface in QBO, you can switch between them anytime. Here's how:
