I am a church treasurer. What is the best way to record distribution reinvestments and changes in market value of investments?

market value is not recorded, the investment cost is what matters

you can do it though if it is needed, create two accounts
equity type = unrealized gain/loss on investments
asset type - unrecognized gain / loss on investments

then a journal entry, debit the asset and credit the equity accounts for the current market value less cost

a distribution you receive is income, then you "buy" additional shares as a reinvestment
