Please, if I am preparing a "Journal entry" in excel (because I already have a database) to import it into quickbooks, how do I know in which column I should put "payment methods"

There is no field for Payment Method in Journal Entry. You have to import data as Receive Payments (against your Invoice) or Sales Receipts, and you will need one of these importer tools to do so.

I agree with Fiat Lux - ASIA, the option to include the payment method when importing journal entries in QuickBooks Desktop is unavailable. You'll have to manually enter it into the program or consider using a third-party importer tool.

Generally, for each type of transaction you can only import data fields that you can see when using QuickBooks.
If you're recording the receipt of money, consider importing either A/R Payments received, or Deposits, depending on how you track sales in QuickBooks. Both Payments and Deposits include the payment method field.
