We are a charity receiving regular monthly, quarterly and annual direct debit donations as well single one off payment. I am adding the deposits by hand and adding individual donors names into Quickbooks and using the paper monthly bank statement to ensure I am in sync with the bank.
I trying to get a list of who are our regular monthly, quarterly and annual direct debit donars and the amount they donate. How best to do this please ? I have thought of using Tags to denote the type of donor they are and then do a custom report - doing tags would be cumbersome but cannot think of another way to show the donars names, what regular donation scheme they are on and the amount they are donating.

Welcome to the Community. I can share some suggestions on how you can come up with the details you need in QuickBooks Online.
There are two reports you can run to get the information you need in the system. I recommend using the Donor Contact List and Transaction List by Donor report.
Before you start running them, you need to go to each of your donors' profiles. I suggest adding a note stating if they are regular monthly, quarterly, or annual direct debit donors.
Here's how:
Once done, you can proceed by running the Donor Contact List report. You can customize it to only show the names and notes.
Please follow these steps:
For the amount they donated, you can use the Transaction List by Donor report. It shows all the transactions related to the donor.
If you need to merge both of the reports, you can export the data to Excel (see screenshot below). This way, you'll be able to combine the data manually.
