You can manually change the expense account of your bill payment Under CATEGORY when categorizing them.
On that same page, you can select the Add or Match function so you can start categorizing them. To add, here's an article you can read to learn more: Categorize and match online bank transactions in QuickBooks Online.
But I'd still recommend contacting the Technical Support the of app you used to pay your bills. With their tools, someone can help you correctly assign an expense account for your bill payments so you don't need to update them once they're downloaded into your account.

Thanks for trying to help. This does not work when the bills are listed as an uncategorized asset. the only options are to change to another asset account. It will not let me change to an expense account. My bank doesn't seem to categorize the accounts but I am going to call them as soon as they open.
I have the additional steps to change the category of your paid bills to the correct expense account, @shadyhillspostal.
QuickBooks Online (QBO) uses a default account, such as Uncategorized Asset, to temporarily hold your downloaded transactions. That may be the reason they are categorized as transferred to uncategorized assets.
Also, it could be you're still in the Record transfer section in the For Review tab. That's why the system won't let you change the category to an expense account.
To help fix this, you'll have to switch the radio button from Record transfer to Add. This way, you'll be able to choose the correct expense account in the Category drop-down. However, if the issue persists, the browser's stored cache may be full. I'd suggest accessing your QBO account via a private browser. It's a great way to isolate the issue since it doesn't store data in the cache. Here are the keyboard shortcuts depending on the browser you're using:
Once logged in, go back to the For Review tab from the Banking menu. Then, make any necessary changes. If it works, clear the cache of your regular browser. This removes the stored cache on the browser so it'll function efficiently. Otherwise, you can use a different browser.
After that, the transactions will be moved to the Reviewed tab. These will also appear on your register. From there, you can review your paid bills and manage other transactions. For more details, visit this article: View Transactions In Account Registers.
