The invoice dashboard will display how many invoices are open and which ones are due. To view them, you can run the Open Invoice report, which allows you to keep track of invoice transactions in QuickBooks.

Are overdue invoices included and calculated within the open invoice number? Or are they separated out, was the question?

In QBO, overdue invoices are not included in the total count of open invoices; they are separated but are part of the overall open invoices list.
