I'll definitely help you create an invoice without the customer's email address.
You can use the Save button to create an invoice without the customer's email address.
On the invoice's screen. click the arrow icon beside Email, then select Save. Close it afterwards to continue managing other invoices.

Alternatively, you can use the Save as draft button to save your invoices.

Need to work on your invoice payments? You can add them manually and categorize them as income. If you have your bank connected, simply categorize them as they appear on your Transactions page.
