I'm just starting with QB, and I've uploaded lists of vendors and customers, but have not entered any transactions yet. I haven't linked to my bank accounts and CC yet. Do I need to set up classes first? How do I start?

You can set up the classes as go once you link the bank accounts, however it might be better to start with the classes you have in mind so you have a clean view of what it is going to look like.
Classes are another way to group transactions. I used classes for a law firm to mark what kind of case they got paid for, service item.
