Hi there, @jason-wagner.

At this time, the customer's payment will automatically be deposited to Undeposited Account when receiving the payment via mobile app.

As a workaround, you may want to use the web browser on your mobile app and log in to your QuickBooks Online account from there. This way, you can select which bank account you'll deposit the payment.

Here's how:

  1. Click the + New icon, then select Receive Payment.1.PNG
  2. Select the customer from the drop-down.
  3. In the Deposit to section, make sure to select the appropriate bank account where you want to deposit the payment.
  4. Select the invoice transactions from the Outstanding Transactions list.
  5. Click Save and close once you're finished.2.PNG

I'm adding this article for more details: Record invoice payments in QuickBooks Online.

You might also want to check out this article for more details about depositing payments into the Undeposited Funds account in QuickBooks Online: Put payments into the Undeposited Funds account.

Please keep in touch if there's anything else I can do to help you succeed with QuickBooks. I've got your back. Have a great day and stay safe.

I understand the workaround but I would prefer to just use the app when possible.  I would hope QBooks adds this at some point to the app since it is just adding ONE field (bank acct) to make a multi-step function into ONE.
