If you have a software synced to QuickBooks that is bringing in the products and services that may be causing issue.
If you entered them into QuickBooks yourself you should be able to change category by going to the Gear Icon > Lists>Products and Services, then to the right of the name select "edit" and change Category. (You may also want to review the income account to make sure correct)
Also keep in mind that any changes are usually to the future data entries of that item, it does not update previous.
KimAnnVA is right, k-myers1. We can remove the sub-categories within in your QuickBooks Online (QBO). I'll further explain this in details.

When creating the Category in the Products/Services menu, the parent product category gets added if you ticked the checkbox and assign a parent category. If you want to remove this, we can do so by going to the List menu.
