I had a payroll state tax cleared in my bank account for 5/31, however QuickBooks has it dated as 6/1. This leaves my reconciliation off. Can I edit the transaction date itself, so it matches my bank statement date? It will not give me editing options in chart of accounts or when I access the transaction through the expenses. Is this something my 'accountant" has to do?

We can see the urgency of this matter and want to ensure you get through this on time. If you've manually added this inside your QuickBooks Online (QBO), the Edit option should be available on your end, and with that said, you can change the date so it matches the date in your bank statement.
Another possibility is that this has something to do with your current role and access rights inside QBO. Know that if you're a standard user inside the company file, there are fields or options to which you have limited access. However, if this is a downloaded transaction from the Banking page, you may want to Exclude the transaction and record a new one with an accurate date. We'll gladly write down the steps below to get you going. To exclude a transaction inside QBO, these are the steps:

Thank you. It will not let me edit the transaction as it was an automatic AZ income tax withdrawal e-payment. There are no options to edit the date even though I am the primary administrator on the account.
Is my only option to exclude this transaction then re-create it with the correct date?

To sort this out, you can match the downloaded bank transaction to the recorded payment and include the transaction when reconciling your account.
Review the Matching records found in QuickBooks for any possible matching transactions already recorded. You can also see a match when you select the Find match section and filter the date range. Here's an article for more details: Match online bank transactions in QuickBooks Online.
Then, by checking the box next to the tax payment with the date of 06/01 in the reconcile window, you can include it when reconciling your bank account for May's statement. Also, ensure to remove the filter so the transactions from other months will show up.
Furthermore, it would be best to seek assistance from your accountant to ensure that your books are accurate and to avoid messing up the data. They'll be able to help and provide more expert ways of dealing with this situation.
Additionally, you can view or print your reconciliation reports in QBO for future use in case you have trouble reconciling the following month or when you meet with your accountant.
