Jay Valencia is a chef, musician turned regenerative farmer and microgreen grower. Raised in Marin County, California and now residing in Las Cruces, New Mexico. Jay is now an advocate for and carries a message of regenerative farming, and permaculture principles that are helping our planet to be restored to a healthier state. He enjoys producing and playing music on weekends as well as continuing his studies around the soil food web, culinary techniques and musicianship. With ancestry in Northern New Mexico, Valencia is the first of his family to return to the land of his heritage.
