I understand how to implement barcode scanning. However I don't want to track inventory or have it effect the accounting side of things. Is this possible?

Yes, it's possible not to track your inventory, so it won't affect your books in QBDT. Since you don't want to track your items, you can set them up as Non-inventory or Services.
