QuickBooks Online (QBO) doesn't delete tasks automatically. Let's open your Audit Log to review the activities made to your account. From there we can trace who made the changes so we can correct them.
To do that:

If confirmed that the product/service item was deleted, you'll need to manually reenter it. In case you need a reference on how to do it, please visit this article: Change product and service item types in QuickBooks Online.
Then you can add the item as the parent product/service of the other item. I've attached a screenshot for a better view:

The parent item wasn't deleted. It's still there, but when I go to edit the price, it asks me to choose a parent product. I can't type it in and there is no drop-down menu to choose from. Bottom line, it doesn't let me edit my services or products.

Thanks for following up with that additional info. I want to make sure you're able to successfully edit a product or service within your QuickBooks Online account.
Since you can't type it in and the drop-down menu doesn't appear, I recommend clearing the browser cache. The cache is in place to collect frequently used data to make loading web pages quicker and easier. If the cache becomes too full it can have the adverse effect, potentially causing viewing and performance errors. Clearing it will force the system to refresh and remove what's causing things to not load correctly. Here's how to get this done in Chrome for example:
1. Click the three vertical dots in the top right corner.
2. Select More Tools, then Clear Browsing Data.
3. Change the time range to All Time.
4. Only check Cached images and files.
5. Click Clear data.
