Yes, you can powervocals. I'm here to share some information about transferring your data from QuickBooks Self-Employed to Quickbooks Online.
These are two different products and there isn't an option to automatically convert the data into one another. That means you must export the file from QBSE and import it into a QBO version. I'll show how to do it:

Doing the steps above, you'll have your data imported to QBO.

Is there any way that we can transfer invoices over as well? Especially those that are not paid.

QuickBooks Self-Employed (QBSE) and QuickBooks Online (QBO) are two different platforms. Thus, you'll want to enter the transactions manually in QBO.
There are two ways to enter past sales and A/R transactions like invoices. Either chronologically and in batches. Feel free to read through about entering historical information in QBO.
Moreover, if you plan to connect the same bank or credit card account you used in QuickBooks Self-Employed, you don't have to move the transactions. You'll just have to connect the account to QuickBooks Online. This will allow transactions to automatically download in your QBO account.

Just to clarify. There is NO way to (in a timely simple fashion) move ALL products/services, customers, or invoices, all at once, from QuickBooks Self-Employed to QuickBooks Plus. Am I correct?

As mentioned by my peer Charies_M above, QuickBooks Self-Employed and QuickBooks Online (QBO) are different platforms. You'll have to enter all the data from QBSE into your QBO account manually
