I want to allow a user to do bank deposits with checks, but NOT see the bank balance. I'm not seeing that setting? TIA!

We have different customer roles that you can grant access to your new user. There are sections in QuickBooks that they can and can't see. To know more, you can use this link: User roles and access rights in QuickBooks Online.
To start adding them once you're identified the role you'll give them, you can follow these steps:
The user will receive an invite to the email you entered. Let them accept the invite so they can create their login credentials. To know the activities made by other users within your books, you can run the Audit log report.

Currently, there isn't a role that will prevent your user from seeing the bank balance while granting access to banking areas. If you're using an Advanced subscription, the closest type of user you'll be able to create is a custom one. You can give these users an ability to work with the Bank Deposit screen, however they'll still have access to view your registers (checking, savings, and credit cards) which display balances.
I can certainly understand how a user role that enables users to do deposits with checks while not giving them access to see bank balances could be useful to yourself/others and have submitted a suggestion about it to our developers as of today.
You can also submit your own feature requests while signed in.

QuickBooks Online has specific user access roles and access rights. For now, the feature to allow a user to make a bank deposit and not see a bank balance is not available yet.
Unfortunately, we have no specific time frame for the availability of this feature. If you've submitted the same feedback, you can track the status of your request in our customer Feedback for QuickBooks Online.
Furthermore, the roles that will allow users to make a bank deposit are Standard All Access and Company Admin. While keeping your bank balance private is understandable, please understand that it's crucial for those users who will create bank deposits to have visibility for several reasons. For instance, it helps prevent errors, such as accidentally depositing more money than you have, ensures financial accuracy, and maximizes the benefits of your banking relationship.
