At this time, the ability to create a specific report that drills down into the payroll summary by employee for each day of the week isn't available in QuickBooks Online.
You can only customize the report using the available options shared by my peer above. Please see this article for further details about this report: Create a payroll summary report in QuickBooks.
For now, I suggest sending your feedback to our product developers so they can review it and consider implementing it in the future. Please know that changes are also based on the popularity of specific feature requests. Let me show you how:

Unfortunately, all things considered, my bookkeeper and I decided that the Payroll add-on wasn't worth it for me with my/our one employee (for tax reporting purposes). So my bookkeeper created the report on QBO itself. But QBO doesn't seem to like to adjust week designations by days of the week. . . .

All things considered: I like your Excel suggestion. That would be fast and simple. (Right now I do it all in my head. For one employee. And he normally only works two days a week. But not always. Much more complex and the Excel solution sounds about perfect.)
