Our firm offers unlimited sick time for employees. We don't currently track it but we would like to start so we can see what the costs are. As well if possible to have it reflect on a paystub when employees take that time and I enter it.
Is it possible to set up a sick pay policy for each employee that we can use when they're off and track everything? My thought was making the sick time renew per pay period to the hours we're paid, 86.67 per period. Is there a better way?

You can add unlimited sick pay in QuickBooks Online Payroll. Let me share with you the steps.
Here's how:
Once done, make sure that the Sick pay drop-down is set to the Unlimited sick pay you created, then click Save again.

I don't have the option of unlimited when I do it. It's only at beginning of year, each pay period, per hours worked and on anniversary date. If I could have unlimited it would be nice.

If you can, would you mind sharing a screenshot of your options? We should certainly have the Unlimited option available. Since you're not seeing it, let's try some basic troubleshooting steps. Such as clearing the cache from your web browser. Web browsers collect cache to save time when loading repetitive data and images. Over time these files can become outdated and corrupted, causing issues like the one you're experiencing with the missing option. I've included the links for all supported browsers that contain the steps to clear the cache below.
After clearing the cache, please make sure to restart your browser. Then, check if the Unlimited option is available.

I appreciate the screenshot you've provided above, @AdminAQR. With that, I can give you the information you need to set up employees' sick pay policy in QuickBooks Online (QBO) Payroll.
For the time being, only QBO US accounts have the Unlimited option when setting up a sick pay policy. That being said, I'd like to verify which region of QuickBooks you've subscribed for? You may be using a different region (i.e., CA or the UK) that's why you're unable to utilize the above-mentioned option.
Also, to get a closer look at your business's finances and employees, QBO provides several payroll reports. For the complete list and guide on how you can customize them, I'd recommend checking out this article: Run payroll reports.

Thanks for letting me know. That's unfortunate since I am in Canada. Is there a reason we don't have that feature? Is there any other option for me to do unlimited then since I do need to setup a policy for tracking and I can't track it without a policy.
