If I scroll through the item list there are lots of blanks, but when I open the part the class is there! When I click OK it updates in the list, at least temporarily. Spend a LOT of time on this issue internally, IT support from the outside........ seems nobody knows what to do.

I've looked into this and don't see any reported issues with accessing Class on the Item list. I want to make sure that you're able to access this.
To start, let's make sure your QuickBooks version is updated to its latest release. This way you're able to download the latest updates and bug fixes available for the program to function as design. Also, please be reminded to create a back up copy of your company file before doing any troubleshooting steps to avoid any accidental data loss.
Then, the missing entries or list elements are sometimes caused by damaged lists. The damage, however, can often be repaired by re-sorting which puts a list back to its default order.

@MirriamM We tried that already with no success. It was an issue right after upgrading to 2021 and has been ever since.

When the tool finds that there’s a data problem, choose Rebuild Now. If everything is fine with the file, tap the OK button to continue using it.
