Creating a Backup of QB Pro 2012 Desktop App When App is Crashing

I recently began a role at this company that kept some of their minor, yet vital, information in QuickBook Pro 2012's desktop app. I need a backup file to transfer information out of there and into a more modern software and the most recent one is still a couple years out of date.

I can sometimes get the app to open, but it then proceeds to show 8-15 error pop-ups and then crashes before I can click anything. If I attempt to click something, it doesn't register. Is there a way I can create a backup with just the files themselves, not the app?
