Error on creating deposit - "Select an account for this transaction" - An account has been selected so I don't understand why I'm seeing this.

There are two different places on the deposit screen where you need to select an account.  One is for the bank account, and the other is for the offsetting account for the deposit - income, liability, etc.   Are you sure you're selecting an account in both places?
