They wanted to track the hours spent of each employee on every projects.
I would like to record the payroll that reflects on the bank feed normally, without breaking down the salary of the 24 employees.
However, that is only possible If I can track their time using QB projects but only if those tracked times will not create another expense in some way.
Can someone confirm if this is possible?

Allow me to share information regarding tracking time using Projects in QuickBooks Online (QBO).
In QBO, tracking time using Projects will not create another expense. Unless you associate those projects with expense transactions like Bills, Checks, or Paychecks.
