Since the update, when creating or updating an invoice and selecting the product, the dropdown only shows the main title without the variation number next to it. For example, as in the image, I would select Aoi Hi Blue and it would use to show Aoi Hi Blue with the sku 1434-05, 1434-25, etc. allowing me to select the correct product. Now it only shows the main title. I've went into the settings and everything has a checkmark as it should.
VERY frustrating and unable to provide invoices due to hundreds of SKU's. I would have to select each one to find the correct SKU. Help please.

We understand how important it is for you to show the SKU on your product and services when adding them to the invoice. Upon checking the screenshot attached to your response, you're using the new invoice experience. Thus, it's the reason the product code doesn't show on your end when you click the Dropdown arrow beside Product/Service. In the new invoice experience, you'll want to select the item or service you want to add to the invoice before the SKU or item code appears.
If you wish to see the SKU before choosing an item inside your invoice, we recommend sending a feature request to our Product Development Team. This way, they can see your feature suggestion and consider adding it for future program updates. We'll write down the steps to get you going:

It can be challenging when you can't select the correct items when creating invoices, Malachiman. I'm here to help you resolve this.
Upon viewing the attachment you've shared, it seems like you're using the new invoice layout. It's the cause why the SKU's are missing. The interface doesn't include the details in the Product/Service column.
As a workaround, I recommend switching to the old layout. This way, you can view the SKUs when adding items to the transaction. Here's how:
Go to the + New menu.
If the option is no longer available, you may want to rename your items to distinguish them when creating invoices. Please see Step 3 in this article for the detailed steps: Add Product and Service Items to QuickBooks Online.
