After converting from QBDT 2019 to 2021, will my 2019 version on my desktop still be accessible or will it be overwritten?
Downgrade away from Sonoma back to the OS you were using previously. I stopped upgrading at Monterey and its been fine.
Also, if your computer is not one of the new M1, if it came with an OS version earlier than Sonoma, you can keep both OS. Keep Sonoma and add the earlier version that worked with the QBDT version you have, like 2019 for example.
That way you can switch between the 2 OS, use the earlier version for QB and the newer version for everything else.

You can run QBD 2019 and 2021 simultaneously. But once your company file is converted to QBD 2021, you cannot open the file again on QBD 2019. Make sure to secure the backup file before opening it on QBD 2021.

It depends on your license type. They released 2 types of licenses for QBD 2021, i.e non-subscription and subscription. The question is do you already have any license for QBD 2021?
Or better yet, do you know of a desktop sw that can import all the QB data

No I dont have a 2021 license. I have not yet purchased the 2021 QBD. I wanted to make sure it will work with Sonoma on M1 iMac that I was looking to purchase.

Which one do you mean? You may consider to purchase a 3rd party conversion service. I would recommend to start from scratch on the new SW to lower your conversion costs. You can use the trial version to access your historical data for good later.
I was considering switching from QB to another company sw, Banktivity. I converted my QB data from QB2019 into a CSV file but it would not import properly into their system. It appeared that the info from the CSV file was not complete. Their tech support person told me to contact QB and ask them the proper way to export the data.

banktivity said they couldn't convert your data, correct? This means you'll need to look for a third-party conversion service to help. Unfortunately banktivity is not a popular app at the moment and I'm not sure you can find a third party conversion service. Another problem is that there is no third-party tool that can export data from QB Desktop for Mac. So your options for converting data are practically non-existent. Starting from scratch in banktivity and accessing your historical data in QB Desktop is the best option.
Ok, I get it. I am looking to upgrade my old 2015 iMac using QB 2019 and getting a new one, thats what prompted my search for QB since since my QB version wont work on the new iMacs.
I am thinking now my best solution may be to just keep my old iMac with the QB on it and just get a new iMac for anything else. Thank you for the comments and information.

It's important to note that QBDT has a 3-year life cycle. It means you'll need to upgrade it with a 3-year increment at a minimum to avoid data issues due to feature or version differences.
For instance, if you have QBDT 2015, you'll need to upgrade it to 2018 before proceeding to 2021. If you have 2019 or newer versions, you may go directly to 2021. QB Desktop 2024 starts from $650 for a single user subscription license. You have to call their sales team to get it. You can't purchase it online. Otherwise, you can get it through selected partners (tax exempt, no credit card required). No patch for QBD 2020 to run on Sonoma. Have you tried updating your MacOS to Sonoma 14.1?
I just called Intuit and they have switched to a yearly subscriiption model for the Desktop version - they are now charging yearly - $649.00 with increases each year... They are offering a 50% discount for one year on the online version ($45/mo)... then $90.00/mo after the first year.
