Follow these instructions below:

Thanks for posting here today, @CreighHill.
I'll share the steps on how you can change the color of the Write Checks window. When you change your account's color, your change affects the account's register and associated data entry forms. That includes your register and the Write Checks window.
Here's how to change the background color:

Let me know if you still have questions or concerns with checks. I'm always here for you. Take care and have a good one.
Right - that's what you do. Notice also that there are options to have high contrast text (white/black depending on dark/light mode).
Thank you for the help. I'm also trying to change the background colors of my window. Also when I change the font colors and exit out and reopen the program the color change doesn't stay as my default. I have change it to my color each time I open Quickbooks.

Reinstalling QuickBooks won't help (I don't think it ever helps - the QuickBooks application is read-only in the Applications folder so it never gets modified during normal operations).
If your color preferences aren't "sticking" then the issue is likely a corrupted preferences file. But first be certain you are talking about the same account in QuickBooks as each account has its own color assigned. For instance in the Checks window if you have multiple checking accounts changing the checking account will also change the color of the background. You can set it up for each one of course.
In the screen shot you sent the red arrow is pointing at the Window title "BOA Operating". The title text color comes from macOS. In this case the title text looks gray which just means the window isn't "active". Clicking on the window title should make the window active and then the title text will be black.
If your color choices turn out to really not be sticking then throw out your preferences as follows:
1. Quit QuickBooks
2. In the Finder, hold down the option key and choose Go->Library. This will open the Library window.
3. Scroll in the Library window until you find the Preferences folder. Double click on that.
4. That opens the Preferences window. Find the files that begin with com.intuit.QuickBooks.
5. Throw all of those in the trash.
6. Restart QuickBooks and set the colors to whatever you want.
Hoping the stick after that. If not, let me know here.
I have the same issue after updating to 2021 for mac today, and reinstall doesn't help. The background is black which is also killing my eyes. I need to figure out how to correct this asap please.
That answer did not fix my issue. I want the background to be white - please help
How absolutely typical of Intuit. You have to uninstall the program to restore defaults. Pathetic!
I figured it out, its MacOS and not Quickbooks. Which is why when you save it, then go back in the program it changes.
Now all of the backgrounds should be white!
And then you can change the highlight color of your check register, but going to the register you want and at the top you will see a color - just change the color or text colors from the register.
You are welcome!
