Let me share some info about your concern.
When you enable the Multiple Inventory Site from the Preferences, QuickBooks uses the inventory site address (Address, City, State/Province, Postal Code, and Country/Region).
If you use an inventory site as the Ship To address, QuickBooks automatically fills in the address for you.

Will we be able to pull a report that tells us sales by location using this data?
Yes, you can pull up location tracking reports in QuickBooks Desktop (QBDT), and I'm here to show you how, @Laura H1.
When you turn on Advanced Inventory and enable the Multiple Inventory Site feature from the Preferences, you can track inventory stored at different sites or locations in QBDT. Then with the data you have, QuickBooks can tell you your sales by location by pulling up the Inventory Sales by Site report. To do this, here's how:
To know other site-specific reports (i.e., inventory status and list per site) in QBDT, I'd recommend checking out this article: Multiple Inventory Sites. It also includes details about assigning and selling items you purchase to and from a specific location and building assemblies, to name a few.
