It wants to Rebuild, but when I hit cancel, and close the software....I reopen it without doing the Rebuild and I run the Verify again and it doesn't find any errors. What would be causing this?

Please take note that if you're suggested to Rebuild your file, you'll have to save a backup file in your Local drive to avoid data loss.
To know more details about these tools, you can check out this article: Verify and Rebuild Data in QuickBooks Desktop.
I've added this reference page for your future tasks with QuickBooks: QuickBooks Desktop Self-Help Articles.
You can always tag my name in the comment section if you have other questions about QuickBooks. I'd be happy to answer them. Take care and have a beautiful day.
