To do this in any version of QuickBooks you need to disconnect the Invoice from the Payment.
In turn, to do that, edit the Payment transactions and remove the check mark for the desired invoice in the table of things the Payment pays and then save the payment.
A quick way to find the payment from the invoice is to use the Transaction History button on the Reports tab at the top of the invoice. Then click on the Payment and then click the Go To button.
