Transactions syncs in QuickBooks depend on what the bank or third-party applications allow. You can reach out to Zelle support to review and set the settings so transactions will flow as Sales in QuickBooks.
If you're trying to manually categorize it from the Banking page and you're not able to do so, may I ask if you encountered an error code for doing such? If not, I suggest performing some basic browser troubleshooting to isolate this case.
Let’s begin by accessing your QBO company through a private or incognito window. This helps isolate the issue since it doesn’t store data in the cache. Make sure to use the correct login credentials.

When you're on the incognito page, try categorizing the transactions again.

If it does, you may want to clear the browsing history of your regular web browser. This will remove previously stored browsing data that might have caused the issue. Otherwise, you can try using other supported browsers to be thorough.
