Estimates are non-posting transactions that allow you to send information to a customer to give an idea of what the product or service will cost them. From an estimate, you can create an invoice, and you can change the status of the estimate to show it's been accepted, rejected, or closed. Here's how to change it to rejected.
You can also change by opening the estimate itself and changing the status drop-down under the customer's name.
For reference, you can run reports in QuickBooks Online to get the information that you need.

I am trying to do the same, but I do not i=find an "Action" column. I am using 2023 Desktop pro
I appreciate you joining the thread, @DawnP. Let me share an overview of how to update the status of your estimates in QuickBooks Desktop (QBDT).
The Action column is available for QuickBooks Online (QBO). In QBDT, you can only select either Mark As Active or Mark As Inactive.
If you'd like to reject an estimate in QBDT, tap on Mark As Inactive from the Estimate window.
After that, you may run your report to view all active and inactive estimates. Here's how:
