How do I access tags in Simple Start? I just signed up and the help documents say tags are available in Simple Start but I don't see where to enter them.

As of now, the tag feature is only available in QuickBooks Self-employed. Most of the updates that we roll out are based on the customer's request. Rest assured, I'll be taking this as feedback and share this post with our product developers for consideration.

If you wish to perform the same action, you'll want to turn on the class tracking feature to organize your customer and vendor transactions.  However, this feature is only available in QuickBooks Online Plus and Advance. You can refer to this link to get started with the class tracking in QuickBooks Online.

None of this answers my question.  I don't see any "Transaction" tab and I don't see any "Tags" tab anywhere in my Quickbooks.  Do I need to turn them on somehow?
