I'd be delighted to provide information about adding the shipping fee to the invoice form.
Just to clarify, did you manually enable the shipping option for sales form content? If so, the shipping box should appear for the invoice and sales receipt form. Here's how you check:
After doing these steps you can wait for a while for the page to load up, open a new invoice, and see a box for the shipping cost.
If the shipping box still won't show up. I'd suggest logging into your QuickBooks Online account through a private or incognito window so you'll have the box for shipping in the invoice form. If it works, return to your regular browser and clear its cache. If not, use other supported web browsers. The current one you're using may have a temporary issue with QuickBooks.
As a workaround, utilize the custom fields it also allows you to get back to working order.

I have a follow up question though. How do i get quickbooks to charge tax on the shipping in those states (in the USA) where shipping is taxable.
I can see the field for 'tax on shipping' but it is not calculating a tax on th shipping even to state where it should?
I have set up the taxes and it is calculating tax on the table products in my invoice just not on the shipping.
