I can share a few insights about the invoice listings in QuickBooks Online. If you're referring to the Invoices tab of the Sales menu, the data displayed here will only go back to the last 365 days for aging transactions and last 30 days for paid invoices.
If you're unable to find them, review the date of the sale or try a private browser. This page prevents cookies from being stored on the computer, making it a great place to identify browser problems. Use any of these keyboard shortcuts depending on the browser you're using:
Google Chrome: press Ctrl + Shift + N
Mozilla Firefox: press Ctrl + Shift + P
Internet Explorer: press Ctrl + Shift + P
Safari: press Command + Shift + N
If they can see them in the private window, clear the browser's cache to remove the history or log files and start with a clean slate.

As mentioned by @Jen_D, there isn't an option to view all the list of invoices if you go to the Sales menu.
Instead, you can see all your invoices by pulling up a Transaction List by Customer report.

How come Quickbooks doesn't fix this issue by allowing us to view ALL invoices from the Sales > Invoices page? Viewing only from the past 365 days is confusing, as it's expected to see all of them there, and not have to run a report.

I'd like to add to this discussion and provide additional insight regarding this matter.
As mentioned by my colleagues above QuickBooks pull up the last 365 days of transactions.
It's because QuickBooks Online limits the transactions that are shown on the dashboard. The more data that load or show will have more memories used on the device and ISP. To ensure that all devices that you will use have the best performance in QuickBooks.
You can follow the steps provided by my colleague @Rubielyn_J on how to run the Transaction List by Customer report to view the list of invoices in QuickBooks.
