If you're referring to the Estimate no. field that is used to track each estimate, this field can be found under the Add customer section when creating the transaction. Make sure first to enable the Custom transaction numbers feature from the settings to make it appear on the page. I'll guide you on how:
Once the option is enabled, the Estimate no. field will now display when you create a new estimate. Then, you can edit it manually based on your numbering preference. Refer to the screenshot below for your reference.

it is enabled but still cannot see the number.

Since you already turned on the Custom transaction numbers in your Account and Settings page and still it doesn't show inside your estimates, we can perform the browser troubleshooting to ensure this has nothing to do with your current browser.
You'll want to access your company file in an incognito or private browser through these shortcut keys:
Once you're in, check if Estimate no. field shows inside your estimate. If it shows, proceed to clear your cache. See this article for the steps: Clear cache and cookies to fix issues when using QuickBooks Online.
