When setting up and recording an in-kind donation, make sure not to miss a single step.
First, you should set up an income and clearing account for charitable contributions. Then create a product or service item for the donations. Once done, you can now record an in-kind donation by entering a sales receipt. After that, create a bill for the donation, then mark the bill as cleared.

How do I create a bill? There's no "create bill" anywhere.
I've gone through the directions step by step up until that point. Though, there is a lot of fields that are left blank using these instructions that seem like they shouldn't be.
I want to ensure this is taken care of, @sugarhousereview.
Usually, this issue occurs is often caused by a browser issue. The cache stores temporary internet files from your browsing history to help your browser quickly load the pages. And that may affect the browsing performance and may require you to clear it out when it gets full.
To fix this, I'd suggest doing a few browser troubleshooting steps to get it to work.
Refer to the keyboard shortcuts below:
• Google Chrome: Ctrl + Shift + N
• Mozilla Firefox: Ctrl + Shift + P
• Safari: Command + Shift + N
• Microsoft Edge: Ctrl + Shift + P
If it works, please clear the cache on your browser to delete some outdated files. Otherwise, you can try using other supported browsers to be thorough.

This isn't a browser cache issue.
I really wish you'd go through the instructions you're telling me to go through on a Quickbooks Online nonprofit account. You'll see that the GUI and your instructions don't actually align anymore. I'm sure they did, at some point, but they no longer do.
I shouldn't have to do this, but I will, since it might help some poor soul in the future. Here's screen shots of every single step in the instructions. Perhaps this way, you'll see that I'm not a complete moron.

Aaaand 12. This is the final error at which point I can't advance (assuming I'm either doing things correctly--since the instructions don't actually align with the GUI very well).
After fiddling with it, I think I got the bill/pay bill to take. So I'm through wiht the instructions.
The Gift in-kind still doesn't appear anywhere on the Statement of Activity with the correct date range.

In regard to the "Something's not quite right: Select a product or service" error you're receiving when trying to select a product/service, I'd recommend checking your browser with the steps provided by Maybelle_S. It's possible this could have something to do with temporary internet files. Browsing applications store these types of records, but sometimes they can cause issues with certain webpages. When testing in a private window, check to see if it works properly and allows you to choose a product/service.
If you've already performed Maybelle_S's steps, you'll want to continue troubleshooting by switching to another browser.

You can also check a browser's compatibility with your books by utilizing our browser health checkup tool. QuickBooks supports the current and two previous versions of browsers. If you find that you're using an older version, make sure to update it to its latest release. Steps for doing so can be found on the particular company's website.
In the event you've found no problems that could be causing this with your browser, I'd recommend using a different device and/or internet connection. If it continues happening on other devices and/or internet connections, you'll want to get in touch with our Customer Care team. They'll be able to pull up your account in a secure environment, conduct further research, and create an investigation ticket if necessary.
