In the customer data entry window can I change the "shipping address" field name to "project address?"

Currently, there isn't an option to change the field name from Shipping address to Project address. As an alternative, you can manually enter the address where the project is completed by the customer. See the screenshot below for your visual reference. 

I'd suggest visiting this website: Manage Your Customer List. This link provides you steps on how to add, delete, merge, and restore your customers in the program. 

Using projects helps you easily calculate your profits and costs by project. To learn more about this process, go through this article: Projects Overview. You'll find steps on how to turn on this feature, add project income and expenses, and run project reports.
