Trying to go and download my statements for the past 2 months and when I click on Activity Reports ---> All Statements, I get a that there are No Transactions which I already know is incorrect. How do I get this resolved and why would it all of a sudden show that there are no transactions on my account?

I have a few troubleshooting steps to help resolve your report issues in QuickBooks Payments. This way, you can quickly review your two monthly transactions.
Ensure that you're using updated Adobe Reader and Internet Explorer to avoid issues in viewing the statements. Once confirmed and the issue persists, I'd recommend utilizing the How to Read Your Card Statement feature from the Activity & Reports menu. This will read your card statement directly to the online service center. See the sample screenshot below for your reference:

If the problem continues, I'd suggest logging your account through an incognito browser. This way, we can verify if it's a browser-related issue. Just click Ctrl + Shift+ P and re-open the report to confirm if it's already performing well. If it works, return to your regular browser and clear the cache.

@MichelleBh I am aware of how to read the statements and where to get the statements. My issue is that when I log into MercantCenter in Intuit Quickbooks online, there is nothing that shows up. I am not using Internet Explorer as I am on a Mac and have been using Safari for years without any issues. As you can see from the photo attached, it states No Transactions on the right of the screen where as before it would give me the option to view and download my statement. I can't actually read the statement when Intuit does not provide the statement. Really wish you guys would just email me the statements like my Intuit Payroll does.

We recommend using Internet Explorer to avoid problems with viewing such information. That's why I'm suggesting you use it for. Another troubleshooting step to help fix the problem is to clear your Safari cache or reopen the report using the supported browser.
Here's how to clear your Safari cache:
If the issue continues, I'd advise you to reach out to our Customer Care Team. They can access your account in a safe place and can provide a copy of the statements. Also, send a ticket to our engineers for further investigation if needed. They are available M-F 6 AM to 6 PM PT. As usual, the QB Wizards are useless. Another great upgrade from QB where they do not fix what needs fixed but create all new problems for their customers.
