You can run the Balance Sheet and Profit and Loss reports in your QuickBooks Online Simple Start subscription. You can apply multiple filters to customize your report. Most reports have the same set of filters. Some filters are only available on certain reports.

What I am looking for is how to set up Quickbooks in such a way that I can run a P&L or Balance Sheet report on any one of the 4 revenue streams I have.

Thank you for coming back to the thread to add further details about your concern. With this, I'll be sharing information on how different revenue stream works in QuickBooks Online.
Each revenue stream, different Tax reports or have different EIN needs to have its own QuickBooks Online account. That said, setting up Quickbooks that you can run a P&L or Balance Sheet report on any one of the 4 different revenue streams you have isn't possible. Also, comparing revenue streams is only available in the QuickBooks Online Advance version.
Additionally, there's a Class feature in QuickBooks Online that allows you to track your transactions by departments, product lines, or any other meaningful segments in your business. So when it’s time to run reports, you have a clear picture of each segment’s financial health. Please note this is only possible in QuickBooks Online Plus and Advanced. If you want to use the said feature available in QBO so you can start treating each revenue stream as its own business, I suggest upgrading your subscription from Simple start to Plus or Advance version.
