I'll share with you some information about the payee field that is not showing in the Categorized section in QuickBooks Online.
As of now, the payee will only show in the For Review tab. The reason for that is so we can match and add the transactions with the correct payee. Also, make sure that the Payee box is checked in the Settings.
See the sample screenshots below for your reference:
As a workaround, re-enter the customer's name in the Memo box. This way, the name will visible under Description in the Categorized section.
If this is already categorized, then let's Undo the transaction so we can apply the workaround. Please click the Undo button under Action, then re-type the payee in the Memo in the For Review section. You also have an option to Undo the data by batch.

It's disappointing and odd that there's not the same flexibility on the Categorized tab that there is on the Reviewed tab. I hope it's in the plans to extend such flexibility on all pages that provide a spreadsheet of data as such.
My goal was to be able to quickly review what I had done for errors. As it stands now, the reviewed page doesn't show me the information I need to do so.
Has this been changed ? Its now April 2022

I can see how the option to see for whom the categorized transactions were would greatly help your business. However, this feature is currently unavailable. I'll encourage you to send a feature request through the Feedback section.
