Yes, there are reports that we can run to get the information you need for your items. It's my pleasure to help you out with this.
For stock inventory, we can run the Item List report to see the stock status. Here's how to do it:
For items on sales orders, we can use the Customer Sales report. On the Report Center screen, click Customers, then select Customer Sales.
We might need to modify the report to narrow down or filter out some data. To do this, simply click the Modify button on a report.
We also have the option to run multiple reports at once. On the Reports menu, select Run Multiple Reports. On the popup screen, select the reports you want to run. Hit Display.

I am running multi-store and I am looking for all items currently on open sales order from any location so that I can tell how much of my inventory is stock and how much is taken up by open sales orders.

It's a brilliant idea to be able to run an open sales order report or an item list report per location. This functionality, however, is currently unavailable for reports in Point of Sale.
I recommend submitting a feedback about it. This way, our product engineers will be able to incorporate it into the software's existing features.
