As a Consultant, how do I track my time in hours to support monthly invoices?

Use the plus New menu and under employees select the single time activity

set your name as a vendor first, then use that name

As another option, consider having a 3rd party time tracker and billing app for professional service (e.g consultants, lawyers), then sync the data with your QBO.  You may track several tasks simultaneously (i.e starting one timer will pause another automatically), create limits on hours billed for tasks, etc. One of the apps costs $20/month
