I'm happy to show you how to set up your assistant so they have access to create journal entries without full access to your companies sensitive information. Follow along below:
Next it gives you the option to customize how much access they have. under the How much access do you want this user to have? You can choose All, None or Limited and under limited you can choose either Customers, Vendors or Both. However you want to set up your assistant is up to you.

I have the same issue and try to do what you say in your explanation, but it doesn’t work , because quickbooks online doesn’t let me make journal entries in Standard User/ Limited/customer and vendors. Would be nice some features regarding this type of concerns.

As another option, let one user prepare the JE data in XLS format and assign one Company Admin to import them in bulk by TPImporter.

Thank you for your answer and showing us another option, but it is more of the same, another subscription. And it's not fair. We are paying for QBO monthly with those poor options to configure user access and we are talking about sensitive information, so far I just want a solution without having to pay another penny.

No, if we give Assistants access to create j/e's then quickbooks automatically give them access to the Register. I wish qb would be set up separate access as I need my Assistant to make j/e's but not be able to see the Register balance.

Giving your assistant access to create JEs only in QBO is not possible. However, you can request this feature to be added by sending your feedback directly to our product engineers. They are responsible for updating and adding new features to the program.
