Regarding your query on adding new fields to the product and services in QBO : Unfortunately we cannot any fields to the product and service creation form ( QBO do support custom fields creation but that applies to other sales forms and PO only).However we can add the info required by you in the current product and service form itself with some tweaks.
1) For adding Location info : Product creation form in QBO have field named "Preferred Vendor " at its end, if you guys are not using the option we can use it to tag the location details to the product. We can add the location names as vendor and update the products ( Notre this location name vendor are only for these specific purpose and shall not be used in any other QBO transaction).
2) For adding weight and size info : Since weight and size of the product change not often, We can add them at the end of description field.
I am aware these are not the perfect solutions but given the limitations in QBO this is the best i can suggest Or may be you can try some third party apps which may help to achieve this.

The option to add the location and weight of your product to the Products and Services feature is unavailable in QuickBooks Online (QBO), Diane.
In QBO, you'll only have the option to add an SKU number and the description. I recommend following the guidance provided by I_am_Pai. You can include the size and weight information in the Description column. This way, it will display in your inventory with complete information about the product.
