The appearance of the sent invoices has always been the same, kathy.turner.
Since some of your customers' invoices have missing details, I'd suggest checking the template used for the transactions. Using a different one can change the details shown. I'll show you how.

You can also go to Custom form styles from the Gear icon to customize or create sales templates.
