Once you delete, you can't recover. It's a permanent delete in QBO.
You will need to recreate again. From the audit history log, you can get the PO data.
From the Gear icon on top, select Audit Log under Tools.
Find deleted transaction in question, click View under History column. Click Show all/Hide all button at the top. You will see the History of that transaction.

My audit log only goes back 7 days ?
Is there any other way I can recover po data ?

I'm glad you chose to reach out for support here in the Community. I can show you how to view more than 7 days in your audit log in QuickBooks Online.
To look through different dates in the audit log you can change the filter. Here's how:
1. Click the Gear icon in the top right corner.
2. Select Audit Log in the Tools column.
3. Choose the Filter button in the top left area of the screen.
4. Click the Date drop-down menu.
5. Select from the options listed or enter your own custom date range to view.
6. Choose Apply when you're finished.
Once you've got the date set, you can then go back and see the purchase order data that was deleted and then recreate it. The following linked article provides even more info about using the audit log in QuickBooks Online.
