I'm grateful for reaching out here, @kellers2020-gmai. I can give information with regards to modifying a paid invoice in QuickBooks Self-Employed.
As of the moment, making changes to paid invoices such as date and amount is unavailable in QuickBooks Self-Employed. However, by providing us with feedback, this will help us enhance our product.

This is a huge non-starter with being able to use QuickBooks Self-employed. I, too, have the same problem as @kellers2020-gmai above and cannot see how to use this product without having the ability to fully control editing invoice & income transactions, especially when trying to use it to feed transactions into TurboTax. @ChristineJoieR I also do not have a "Feedback" item under my settings/gear menu. Perhaps that's because I'm still in eval trial mode?

Being able to edit your invoices is very helpful for your business. You can consider sending a request for this feature.
