I'm excited to tell you more about the Projects feature and help you decide on switching your sub-customers to projects.
It's true that you can do more with the Projects feature. However, this entirely depends on how you would handle your customers list.
If you're looking to organize your customer-related activities (time, estimates, invoices, etc..) and see how profitable a job is, then this feature might work well for you.
Before diving into the Projects feature, I would recommend reading these articles to help you familiarize with it:
For convenience, I'll add the steps to help you enable the Projects feature:
With the Projects feature enabled, you can add multiple projects under a single customer. All you have to do is to simply create a new project, then map it to a specific customer profile.
Go to the Projects page, then click the Start a new project or the New project button.
If you haven't done it yet, you can also convert those sub-customers to projects. Go to the Sales tab then select Customers.
Click the Convert now on the Do you organize sub-customers as projects? box.
If you don't see this option, create at least one project and map it to a certain customer.
Also, I'm sure you'll have other things to take care of aside from managing your customers or projects. If you haven't done it yet, you'll want to review your financials after converting from the Desktop platform.

Is there a way to do a Bulk convert sub-customers to projects? I have over 10,000 that need to be converted to projects and I'm not able to select more than 100 without having to scroll down.

At this time, most of our customer is now utilizing the project feature in QuickBooks. However, in your situation, we're unable to convert sub-customers to projects in bulk.
I think it'd be good if we have this option for you to have less hassle in converting it. I'd encourage you to submit feedback about this from your QuickBooks account. You can click on the Gear icon and choose Feedback. Here's how:

This is one of the limitations when converting data from QBD with Jobs to QBO. You have to manually record Job data into Class or Project in QBO. Another option, purchase a third party service to do so.
I too, have just moved from QBD 2020 to QBO. Under QBD, I have my customers and jobs setup in hierarchical format like this: Customer Name, (New Job) Property address, (New Job) Month and Year of current job. Invoices are created under the month/year job level. This allows me to make paid invoices and closed jobs inactive each month and still have all information available.

If the customer has more than 1 property, it is added as a new job under the customer name with a new job added under it for the MM/YYYY job:

How do I accomplish this or something similar in QBO? Right now, my QBO Customer list is very confusing.
I was hopeful I could use the projects feature for a similar process to this, but unfortunately projects are not allowed to be underneath subcustomers for some unclear reason. I can understand not having subprojects but not allowing them to be under subcustomers? they must have trouble with the transaction rollup but I don't see why it'd be any different than several levels of subcustomers. The records look the basically the same from an API perspective
